Recipe: Quinoa Salad

Here’s our take on one of the healthiest and most nutritious superfoods on the planet, quinoa! Rich in fibre, minerals, antioxidants and all nine essential amino acids this dish is perfect for those trying to improve blood sugar levels, cholesterol levels or lose weight.

Ingredients


  • Quinoa – 1 cup

  • Red Peppers – ½ cup

  • Yellow Peppers – ½ cup

  • Zucchini – 1 medium

  • Carrots – 2 medium

  • Thyme – 4 tbsp

  • Lemon Juice – 4 tbsp

  • Basil – 4 tbsp

  • Virgin Olive Oil – 3 tbsp

  • Black Pepper – to taste

  • Salt – to taste


 

Method


  1. Wash the peppers, zucchini and carrots and dice to equal size.

  2. Wash the quinoa and parboil for around 5 minutes, stirring occasionally until tender.

  3. Drain the quinoa and leave to rest for 5 minutes.

  4. Mix the quinoa and vegetables in a large mixing bowl. Add basil, thyme and mix again.

  5. Add virgin olive oil, lemon juice and salt & pepper to taste.

  6. Serve cold and enjoy!
